POKOTABI / Sushi Ichikoshi
鮨いちこし
Located on the second floor of a Nishi-Shinjuku building, Sushi Ichikoshi serves an omakase nigiri course spotlighting firm-grained sushi rice and charcoal-seared seafood across an intimate counter.
01 / ABOUT THE PLACE
Ascending to the 2nd floor of a building tucked away in the commercial district of Nishi-Shinjuku, Sushi Ichikoshi welcomes guests into an intimate room arranged around a counter with roughly 6 seats. The compact proportions bring diners close to the cutting board, where every knife stroke and preparation can be observed in detail.
Central to the nigiri course is the shari, cooked somewhat firm to retain distinct grain definition. Kept at a carefully monitored temperature, the rice melds effortlessly with pristine seafood before gently yielding on the palate. A notable house technique is the use of charcoal heat: fatty tuna and barracuda receive a momentary kiss of charcoal flame, lending a subtle smokiness that lingers warmly alongside salt and condiments.
The omakase pacing balances subtlety and punch, alternating aged striped jack, horse mackerel, and kombu-cured cuttlefish with rich uni, toro-taku rolls, and a restorative clam and shijimi dashi broth. A thoughtful selection of wines and sakes is also on hand to accompany each stage of the dinner.
With just 6 seats in total, reserving dinner in advance is essential. The low-key environment encourages natural conversation with the approachable chef, making it a satisfying address when you want to take your time over a focused nigiri tasting in central Tokyo.
